Thinking and looking far ahead, this coffee features the taste of chocolate, floral notes, and a blend of aged/ripe fruit flavors that release the aroma of rum and wine. True to its name, despite its age ("Young Old"), it remains energetic, creative, and innovative. The sub-variety of Exelsa coffee grows in peat soil traps. It is formed from the accumulation of organic material derived from tree remnants, grasses, moss, and decaying animal carcasses which harden during biological, chemical, and physical processes that occur due to the overburdening from covering sediments. Subsequently, it undergoes high-temperature compression and pressure, burning its ash into carbon which covers grasses or plants that are partially unburned. Trapped for thousands of years, it forms lignin compounds which, in their degradation process, produce phenolic acids (Stevenson, 1994), shaping the characteristic notes of Exelsa, which are rich in the flavor of Chocolate, blending of aged/ripe fruits, rum, and a hint of wine.
