BURNT COFFEE (KOPI GOSONG)

With my coffee-holic daughter, we ordered an Americano at the top Branding Coffee place in Yogyakarta. After tasting, there was a faint burnt taste (my child found this flavor profile very interesting). Enthusiastically, she asked, "Can you, explore that burnt taste and turn it into a complex, balanced, exotic, and unique flavor?"

Okay!!! Challenge accepted!

This single-origin Liberica coffee variety grows in complex sedimentary soil where intrusive particles influence the ancient roots, lifting them up. It is blended with clay from shrub vegetation, lipid oxidation, aromatic peat compounds, as well as 'protective trees' to counteract intense ultraviolet radiation, strong winds, and moderate rainfall. This creates an intact coffee character preserved according to the cultural traditions of its care.

Following dehydration, the beans enter the Pyrolysis reaction. Before caramelization, the temperature is raised, then the heat is turned off, the cover is shut, and the airflow is stopped. This causes a concentrated smoke effect inside the drum. 15 seconds later, the coffee beans are taken out. The roasting machine runs normally, the heat is turned back on, the previously removed coffee beans are put back in, and the roasting is continued according to the protocol and target profile.
